Food grade silicone oil (methyl silicone oil) demonstrates unique value in the baking industry. When demolding cake molds, a 0.1% -0.3% silicone oil coating can increase the demolding rate to 99% and reduce mold cleaning times by 70%. In liquid food processing, silicone oil as defoamer can reduce the surface tension to 22mN/m (72mN/m for water), reduce the volume of foam in juice production by 85%, and increase the filtration efficiency by 40%. A case study of a dairy company shows that adding 0.05% silicone oil can shorten the fermentation time of yogurt by 2 hours and make the texture more uniform.
